Beef, Mushroom & Parsnip Risotto

Happy New Year! Hard to believe that it's 2020! I hope that on this 27th day of January, that 2020 is treating you well!

So, I'm trying to get back to my weekly batch cooking, and I think this is the second week, not in a row, that I've cooked. Cooking once a week, for the week, just makes sense!

I tried a new recipe this week. Beef and Mushroom Parsnip Risotto courtesy of The Paleo Mom. The picture on the site looked DELICIOUS, and I was pleasantly surprised with how it turned out!

If you know me at all, you know I sometimes do not make the recipe exactly like what's written. Below is what I did different:

  • I used a mixture of white and Baby Bella mushrooms. My perferred grocery store didn't have them, and I was honestly too lazy to go elsewhere
  • I did not use Kettle & Fire Beef Broth. Again, my store didn't have it, so I used Kitchen Basics Original Beef Bone Broth
I sometimes forget the nutty flavor of parsnips. It makes for an interesting flavor, but really good!!

All in all, I'd definitely make this again!
