Apple Cider Vinegar (ACV) Gummies

I love gummi bears! Ok, full disclosure, I love anything gummi. However, it's not the best thing in large quantities, so I make my own.

I was scrolling through IG the other day, and saw a recipe from @paelohacks for Apple Cider Vinegar (ACV) Gummies. Just in case you didn't know, ACV has some proven benefits, but it's not the best tasting stuff in the world. With the gummies, you can get your daily dose of ACV and not be completely overpowered by the taste.

I use silicone pans that make cute shapes! Who doesn't want a gummi person?!

Mango Salad Dressing

I have discovered the wonder that is Salad in a Jar! These pre-prep salads are amazing! I prep five jars during my cooking day, and just grab one to stick in my lunch bag each day for work. Now, with salad, most people use salad dressing. Practicing the AIP lifestyle gives you very few choices for store bought dressing. Oil and balsamic vinegar is the only one I can think of, and that's pretty boring.

So, I came up with a salad dressing that is so easy and tastes delightful. I really have just eaten it by the spoonful. Tonight. Don't judge me.

Anyway, the ingredients are below:
  • mango chunks
  • sweet onion
  • cilantro
  • sea salt
  • honey
  • lemon juice
  • olive oil
  • water
Again, I'm one of those cooks that, most of the time, don't measure stuff. Terrible, I know. Mango is the ingredient you'll use the most of. Less than half of the amount of mango you use for the onion. I'm generous with cilantro. Less so with sea salt. About 1-1.5 tablespoons of honey. Maybe 2 tablespoons of lemon juice. Eye the olive oil and the water. Use more water if you want a thinner dressing.

Those are guidelines only! Use your eyes and your sense of taste. OH! The ingredients take up half of the smaller smoothie cup by Ninja. HA! I hope my guidelines help even a little bit.

Anyway, put all ingredients in a smoothie cup and blend until smooth. I would suggest putting the honey in last. Once smooth, taste it to see if it needs anything, and tweak accordingly. If you don't like cilantro, use less. If your mango wasn't as ripe to bring the sweetness level you like, add more honey. I guarantee you'll like this dressing!

Turkey Meatloaf

So, I had to travel for work last week, and typically, I bring my own food. That means cooking things that are easily transportable, in individual portions. I would say I've been food prepping and batch cooking for maybe 2-3 years now, and while it's much easier (and quicker) than it was in the beginning, I still like to find new and creative recipes.

A friend of mine (KB) shared a turkey meatloaf recipe with me, and told me how good it was! She used pesto in it, and that idea stuck with me. I asked her to send me the recipe as a guide then tweaked it to my specifications. I wanted to make it AIP compliant.

For my turkey meatloaf, I used the following ingredients:
  • ground turkey - 1 pound
  • AIP basil pesto - 2 to 3 cubes 
  • garlic powder
  • sweet onions - diced
  • onion powder
  • sea salt
  • coconut aminos
  • cassava flour - in place of bread crumbs or crackers 
Mix all ingredients together in large mixing bowl until fully incorporated. Bake in mini loaf pans or muffin  pan at 400 degrees.
