Turkey Meatloaf

So, I had to travel for work last week, and typically, I bring my own food. That means cooking things that are easily transportable, in individual portions. I would say I've been food prepping and batch cooking for maybe 2-3 years now, and while it's much easier (and quicker) than it was in the beginning, I still like to find new and creative recipes.

A friend of mine (KB) shared a turkey meatloaf recipe with me, and told me how good it was! She used pesto in it, and that idea stuck with me. I asked her to send me the recipe as a guide then tweaked it to my specifications. I wanted to make it AIP compliant.

For my turkey meatloaf, I used the following ingredients:
  • ground turkey - 1 pound
  • AIP basil pesto - 2 to 3 cubes 
  • garlic powder
  • sweet onions - diced
  • onion powder
  • sea salt
  • coconut aminos
  • cassava flour - in place of bread crumbs or crackers 
Mix all ingredients together in large mixing bowl until fully incorporated. Bake in mini loaf pans or muffin  pan at 400 degrees.
