Compliant Poutine

So, my daughter introduced me to poutine. I've had the original, and it is so good! I had to come up with a way to make it compliant, so I could enjoy poutine regularly.

I start with what we call Hamburger Spinach stuff.

Ingredients:

1 pound ground beef
1 bag baby spinach
1 medium to large sweet onion, diced
Garlic powder
Sea salt
Onion powder
Basil
Olive oil

Instructions:

1. Saute onion in olive oil until soft and fragrant.

2. Add ground beef until browned throughout. Add seasonings to taste.

3. Add spinach until wilted.
Now, onto sweet potato fries.

Ingredients:

1 large sweet potato
Olive oil
Sea salt

Instructions:

1. Peel and cut sweet potato into fry-like pieces.

2. Add sweet potato to large bowl and olive and toss until covered. Add sea salt, and toss again.

3. Arrange sweet potatoes on a cookie sheet lined with parchment paper. Bake at 400 until browned and cooked throughout.  You made need to flip them midway.

Time for the magic!!! You'll need the Hamburger Spinach Stuff, sweet potato fries, and a ripe avocado.

1. Add a serving of sweet potato fries onto a dish.

2. Place a serving of the Hamburger Spinach Stuff on top of the fries.

3. Dice the avocado and add some on top, and enjoy!!!

Refreshing Chicken Salad

When trying to make better food choices or be compliant with a certain protocol, sometimes you just want easy! My Refreshing Chicken Salad is just that. Super easy. And delicious!

You can thank my coworker and friend, Brian H., for this post! I let him try it, and his expression was everything!

Ingredients:

Cooked chicken, cut into cubes/pieces
Cucumber, diced
Sweet onion, diced
Avocado, chunked/cubed
Cilantro
Garlic Powder
Sea Salt
Lemon Juice

Instructions:

1.  Mix chicken, cucumber, and sweet onion together. Include avocado in this step if you are eating immediately after preparation.

2.  Add seasonings to taste. Light on the sea salt, medium with garlic powder, and heavier with cilantro.

3.  Add lemon juice gradually. Taste in between. You can always add more.
