Compliant Poutine

So, my daughter introduced me to poutine. I've had the original, and it is so good! I had to come up with a way to make it compliant, so I could enjoy poutine regularly.

I start with what we call Hamburger Spinach stuff.

Ingredients:

1 pound ground beef
1 bag baby spinach
1 medium to large sweet onion, diced
Garlic powder
Sea salt
Onion powder
Basil
Olive oil

Instructions:

1. Saute onion in olive oil until soft and fragrant.

2. Add ground beef until browned throughout. Add seasonings to taste.

3. Add spinach until wilted.
Now, onto sweet potato fries.

Ingredients:

1 large sweet potato
Olive oil
Sea salt

Instructions:

1. Peel and cut sweet potato into fry-like pieces.

2. Add sweet potato to large bowl and olive and toss until covered. Add sea salt, and toss again.

3. Arrange sweet potatoes on a cookie sheet lined with parchment paper. Bake at 400 until browned and cooked throughout.  You made need to flip them midway.

Time for the magic!!! You'll need the Hamburger Spinach Stuff, sweet potato fries, and a ripe avocado.

1. Add a serving of sweet potato fries onto a dish.

2. Place a serving of the Hamburger Spinach Stuff on top of the fries.

3. Dice the avocado and add some on top, and enjoy!!!

Refreshing Chicken Salad

When trying to make better food choices or be compliant with a certain protocol, sometimes you just want easy! My Refreshing Chicken Salad is just that. Super easy. And delicious!

You can thank my coworker and friend, Brian H., for this post! I let him try it, and his expression was everything!

Ingredients:

Cooked chicken, cut into cubes/pieces
Cucumber, diced
Sweet onion, diced
Avocado, chunked/cubed
Cilantro
Garlic Powder
Sea Salt
Lemon Juice

Instructions:

1.  Mix chicken, cucumber, and sweet onion together. Include avocado in this step if you are eating immediately after preparation.

2.  Add seasonings to taste. Light on the sea salt, medium with garlic powder, and heavier with cilantro.

3.  Add lemon juice gradually. Taste in between. You can always add more.

Turkey Meatloaf

So, I had to travel for work last week, and typically, I bring my own food. That means cooking things that are easily transportable, in individual portions. I would say I've been food prepping and batch cooking for maybe 2-3 years now, and while it's much easier (and quicker) than it was in the beginning, I still like to find new and creative recipes.

A friend of mine (KB) shared a turkey meatloaf recipe with me, and told me how good it was! She used pesto in it, and that idea stuck with me. I asked her to send me the recipe as a guide then tweaked it to my specifications. I wanted to make it AIP compliant.

For my turkey meatloaf, I used the following ingredients:
  • ground turkey - 1 pound
  • AIP basil pesto - 2 to 3 cubes 
  • garlic powder
  • sweet onions - diced
  • onion powder
  • sea salt
  • coconut aminos
  • cassava flour - in place of bread crumbs or crackers 
Mix all ingredients together in large mixing bowl until fully incorporated. Bake in mini loaf pans or muffin  pan at 400 degrees.

Cabbage Stuff

Happy Sunday, y'all! Tomorrow is Monday, and I hope you're ready for a new week! I know I'm food ready. I still have ONE more recipe that I need to put together, but that will have to wait until tomorrow night. I'm a little worn out. I had a busy weekend full of cooking, lessons for a little, a 5K and two meals out! I'm a little worn out!


Anyway! I'm rambling! Time to share a new recipe! I'm calling it Cabbage Stuff, and I got it from one of the members of the AIP for You and Me Facebook group. Again, an amazing support group for those embarking on your own AIP journey.


Ingredients:
  • 1 pound ground beef
  • 1 medium to large sweet onion
  • 1-1.5 cups of baby carrots
  • 1 small to medium head of cabbage (shredded or chopped)
  • Chicken or vegetable broth (I like to use homemade)
  • 2 cloves garlic
  • Garlic powder
  • Onion powder
  • Basil
  • Sea salt
  • Olive oil
Directions:
  • Garlic press the garlic and food process the carrots and onions.
  • Add olive oil to a large stock pot and sauté garlic, carrots and onions until soft.
  • In a skillet, brown the ground beef with a little olive oil and sea salt until brown.
  • When the carrots, onions and garlic are soft, add the head of cabbage that has been shredded or chopped.
  • Once the beef is done, add it to the stock pot with the garlic, carrots and onion. Also add a little organic (or homemade) broth and lower the heat to simmer. Add seasonings listed above to taste.
