Reintroduction!

Hi, my name is Erika, and I've been a delinquent blogger!

Eats by Erika is my food brainchild, and I've neglected it. Now that you and I know that, let's move on.

In my first blog, I discussed a little of what I planned to do with this blog. I love to cook, and I love to share my cooking and recipes. I follow the Autoimmune Protocol (AIP) about 90% of the time, and I know how difficult it can be to come up with recipes that are compliant. I wanted to share meal prep as an everyday chick that wasn't an AIP expert.

I also want to share my favorite comfort foods and recipes that I learned from my mom and others.
OH! I also LOVE music, so every blog will begin with lyrics. Just a quirk of mine.

If you have questions, ask them. Want me to try and make a "regular" recipe AIP compliant, let me know. Have suggestions, tell me!

Staples

Hello! I have been delinquent, my friends! I'm trying to get myself on a regular blog schedule. Sometimes, it's easier said than done! Anyway, let's get to the topic at hand.


In my kitchen, there are certain spices and foodstuffs that I like to have on hand at all times. Let's start with my preferred spices.
  • Sea salt
  • Garlic powder
  • Onion powder
  • Basil
  • Thyme
  • Parsley
  • Fresh Garlic
  • Cilantro
The must-haves that I like to keep in my pantry and/or refrigerator are:
  • Avocados
  • Sweet onions
  • Honey
  • Coconut oil
  • Zucchini
  • Bananas
  • Spinach (fresh)
  • Sweet potato starch noodles
  • Homemade broth
  • Coconut aminos
  • Coconut milk
I feel like these staples allow me to be so creative in the kitchen. I can make MEAL(s) with these ingredients! Smoothies, avocado pasta, simple veggie stir fry...there are so many options. Plus, as long as I have these ingredients, I feel competent. Does that make sense? I feel like I can make anything. These staples are things that I use weekly, so it makes sense to keep them in the house.


Anyway, I will be better about posting! I've had so many ideas for posts, but have been so lazy about putting them together. Forgive me, Readers!
